What is kombucha?
kombucha is a fermented tea made from sweetened tea and a SCOBY culture (bacteria and yeasts) over weeks. It has been made for over 2,000 years in ancient China. Mūn Ferments has been crafting it since 2015. Read the complete guide to what kombucha is.
What does kombucha taste like?
kombucha has a peculiar taste, somewhere between sweet and sour. Depending on the variety, it may resemble cider or rosé champagne. It's a unique drink — the best thing is to try it.
What properties does kombucha have?
kombucha contains natural probiotics, organic acids, enzymes, and B vitamins. It supports gut health and digestion, contributing to immunity. See all the benefits with scientific evidence labels.
Does kombucha need to be kept in the fridge?
Only a kombucha loaded with sugar needs to go in the fridge. Mūn's very low residual sugar content makes our kombucha the only artisanal, unpasteurised one that doesn't require refrigeration for preservation. Read why.
What ingredients does kombucha contain?
Less is more: water, sugar, tea, and a traditional culture (bacteria and yeasts). Only 4 ingredients. At Mūn, we use organic Lung Ching green tea, organic cane sugar, and filtered water.
Are all kombuchas the same?
No. A quality kombucha should be packaged in glass or BPA-free cans, not be pasteurised (to avoid losing probiotic properties), contain natural organic ingredients, and have minimal residual sugar. How to recognise good kombucha.
How can kombucha be healthy if it contains sugar?
No panic. Sugar is the food used by yeasts and bacteria for fermentation. Without sugar, there is no kombucha. In the final product, only a minimal residual amount remains. Mūn kombuchas range between 0.1 and 1.8 g per 100 ml — a record for unpasteurised kombuchas. Complete calculator.
Does kombucha contain alcohol?
Like all fermented products, some alcohol is generated during the process. Mūn kombuchas contain less than 1.2%. More details.
Are all kombucha batches the same?
No. Ambient temperature, the sugar concentrations in added fruits and vegetables, the time of year, and the lunar phase during production make each batch unique. Taste, sweetness, and carbonation can vary. Nature cannot be fully controlled.
When is the best time to drink kombucha?
Drink it well chilled to appreciate the flavour and natural bubbles. There's no ideal time: on an empty stomach, replacing coffee, before a meal, after exercise… The best option is whenever you fancy it.
What is the recommended daily amount?
Start with 100 ml daily and gradually increase according to tolerance. A regular consumer can drink 250-500 ml a day without issue. See the complete guide.
How is Mūn kombucha made?
We infuse Lung Ching green tea, sweeten it with organic cane sugar, and add a culture of bacteria and yeasts (SCOBY). We let it ferment for up to 30 days. Before bottling, we add fruit or vegetable juices for the second fermentation. See the two phases of the process.
Does Mūn add gas to kombucha?
No. The fizz is generated spontaneously during the second fermentation inside the bottle. We do not intervene. That's why the intensity varies between batches and varieties.
What is the best before date?
Up to 12 months from the production date if stored at room temperature, protected from direct sunlight.
Once opened, how should I store kombucha?
Refrigerate the bottle and consume within a maximum of 7 days. kombucha does not lose its properties, but its flavour may change and it may lose its fine fizz over the days.
Where do you make Mūn kombuchas?
In our workshop in Mataró, near Barcelona. The mild climate of the Maresme capital is ideal for fermentation.
Can I drink kombucha if I have SIBO or problems with probiotics?
If you suffer from SIBO (small intestinal bacterial overgrowth), kombucha may not suit you as it is a highly probiotic product. Each millilitre contains around a million bacteria. Consult a professional first. All contraindications.
Is kombucha suitable for coeliacs?
Yes. There is no gluten present in the production process. Suitable for coeliacs and those allergic to gluten — we confirm this with periodic analyses.
Is kombucha suitable for vegans?
Yes. All Mūn kombuchas are suitable for vegans, as indicated on the label.
Can I drink kombucha during pregnancy or breastfeeding?
The general recommendation is to avoid it during pregnancy and breastfeeding. It is an unpasteurised fermented drink, with live bacteria and residual alcohol. Specialists usually recommend avoiding unpasteurised products. More information.
Where should I start if I've never tried Mūn?
If you've never tried kombucha, start with the Casual collection (Ginger-Lemon or Red Berries are the most balanced for beginners). If you're already an expert, switch to Premium. If you like innovation, try Not-Birra or Isotonic.
Can children drink kombucha?
It's important to note: it contains a minimal amount of caffeine (≈ 5 mg vs ≈ 100 mg in a coffee), and as a fermented product, it contains residual alcohol (< 1.2%). Compared to a sugar-laden soft drink, a glass of kombucha is a healthier option, but consumption by minors should be occasional and with parental consent.
What is the sediment found in kombucha bottles?
Good news! The sediment at the bottom consists of natural yeasts that have contributed to generating the bubbles. It has a peculiar flavour but provides B vitamins and other benefits. The solid substance in the neck is the "mother" — decant it when serving or drink it without fear.
Do you offer international shipping?
We ship throughout Spain (including the Balearic Islands) within 24-48 hours. The Canary Islands are temporarily out of coverage. Shipping to the rest of Europe takes 3-4 days.
