From an Asian curiosity to an everyday drink in thousands of Spanish fridges. Why kombucha is moving beyond a niche — and how it fits into your day.
1. Why people are changing to kombucha
The most interesting question today is not what kombucha is. That has already been resolved: fermented tea, live probiotics, refreshing sour taste. For the technical version, see the complete guide.
The interesting question is why more and more people are choosing it. In Spain, kombucha consumption has grown between 25% and 40% annually since 2019. It is not a passing trend — it is a change in habit.
The real reasons, gathered from thousands of conversations with our customers since 2015:
1.1. Stop drinking soft drinks without giving up the fizz
The natural carbonation in kombucha comes from the second fermentation, not from injected CO₂. The bubbles are finer and less aggressive than a soft drink, and the acidity (from the fermented tea itself, not added) replaces sweetness with something more interesting. Many people who had wanted to quit cola for years achieve it with kombucha — without feeling deprived.
1.2. You have something to toast with without getting drunk
Craft beer contains 4-6% alcohol. Wine, 12-14%. Kombucha, less than 1.2% (residual from natural fermentation). You can toast, hold a glass, extend dinner — without losing your head or your sleep. It is the NoLo (No alcohol/Low alcohol) category that is growing across Europe.
1.3. It feels good for your stomach
We will not promise that kombucha cures anything. What we can share is what we hear daily: people with heavy digestion, bloating after eating, chronic constipation — who, after a few weeks of daily kombucha consumption, notice improvement. The microbiota benefits from regular intake of live probiotics, and kombucha provides them effortlessly.
1.4. It has much less sugar than you think
This is the most common surprise. People assume that a fruity, bubbly drink is sweet — and therefore, sugary. Mūn Premium kombucha contains between 0.09 and 1.80 g of sugar per 100 ml. A regular soft drink has 10.6 g. The difference is one of magnitude, not nuance.
If you want to calculate exactly how much sugar you consume: Mūn sugar calculator.
1.5. Fits into any diet
Vegan, gluten-free, lactose-free, without artificial colours or preservatives, low in calories (0.4-7.2 kcal/100 ml in the Premium range). If you are following any conscious diet — keto, Mediterranean, vegetarian, anti-inflammatory, no added sugar — kombucha fits in without requiring you to read strange ingredients.
2. Kombucha in daily life
It is not a drink for special occasions. The interesting thing is that it fits into many moments of the day, each with a different variety or approach. This is how people integrate it:
🌅 In the morning — coffee alternative
Especially Mūn Gut Morning (kombucha + turmeric + ginger) or Mūn Green (green tea). They awaken you without the 11 am slump. The caffeine from the base tea is mild (~15 mg vs 80 mg in an espresso).
Bonus: consuming something fermented on an empty stomach is digested better than a coffee with milk.☀️ Mid-morning — instead of a vending machine soft drink
Where there used to be a diet cola or an industrial iced tea, now there is room for a Mūn Hibiscus (Europe's lowest sugar record) or Mūn Verbena. The same cold, bubbly experience, without sugar or sweeteners.
Works in offices, in the car, after a long meeting.🥗 With meals — replaces soft drinks
If the meal is heavy (paella, lasagna, burger), the acidity of kombucha aids digestion. Mūn Ginger is the most stomach-friendly, Mūn Flowers the most versatile. Better than a beer if you have to return to work.
It is what is drunk in many healthy restaurants as an alternative to wine at lunchtime.🏃 After exercise
Mūn Isotonic is designed precisely for this: it contains natural electrolytes (sodium, potassium, magnesium) that replenish what you lose through sweat. Without the sugar of commercial isotonic drinks.
Up to 2 cans (660 ml) after training is reasonable.🌆 In the evening — the alcohol-free aperitif
This is where kombucha shines most. Mūn Not-Birra has notes of barley and hops (the sensation of beer, without the alcohol). Mūn Not-Mojito is the cocktail ritual without the hangover. You toast, hold your glass, and don't come home late having had too much.
It's the peak sales period. June-August, terraces, without losing the next night.🌙 At night — caffeine-free option
Mūn Hibiscus is hibiscus infusion kombucha (tea-free, caffeine-free). It can be consumed before sleep without disturbing rest. The light acidity relaxes the stomach after late dinners.
Better than sugary infusions or commercial "digestive teas".3. Kombucha as an alcohol alternative
This is probably the most significant habit change kombucha is driving in Europe. In the United Kingdom, NoLo (No alcohol / Low alcohol) beverages are growing 8 times faster than the rest of the drinks market. In Spain, we are a little behind, but the same movement is already here.
What motivates someone who has been drinking beer with meals for years to switch to kombucha?
- Better sleep. Alcohol, even in small amounts, fragments sleep. Removing it from dinner = better rest.
- Driving home. No need to calculate how long it's been since the last drink.
- Not gaining weight. A third of a pint of beer = ~150 kcal. A kombucha = ~10 kcal. If you drink 4 a week, the annual difference is significant.
- Next morning productivity. Without that feeling of "it's hard to get started".
- Pregnancy, breastfeeding, medication. Stages where alcohol is not an option but the social gesture is.
Kombucha resolves the gesture (glass, toast, complex flavour, bubbles, ritual) without the consequences. That is why Mūn launched the NoLo line: Not-Birra (beer notes), Not-Birra Lemon (shandy notes), Not-Mojito (cocktail notes). Same ritual, no perceptible alcohol.
If you want to reduce alcohol without feeling like you are giving up anything: start by replacing 1 out of every 3 beers or glasses of wine with a NoLo kombucha. People who do this notice changes in sleep and energy within 2-3 weeks.

4. Kombucha vs what you used to drink
We do not compare it by nutrients (that is already in the complete guide). We compare it by occasion and experience:
| You used to drink… | You switch to… | What you gain |
|---|---|---|
| Kombucha (reference) | — | Live probiotics, organic acids, natural carbonation, <1 g sugar |
| Diet cola soft drink | HIBISCUS or VERBENA | No sweeteners, no aspartame, no artificial colours |
| Third of a pint of beer | NOT-BIRRA or NOT-BIRRA LEMON | No alcohol, gluten-free, no calories |
| Industrial iced tea | GREEN or FLOWERS | No added sugar, with live probiotics |
| Gym isotonic drink | ISOTONIC | Electrolytes without artificial colours or sugar |
| Glass of wine at lunchtime | GINGER or FLOWERS | Same gesture, afternoon productivity intact |
| 5 pm coffee | HIBISCUS (caffeine-free) | Without disrupting night sleep |
You do not have to change everything. The most realistic way to start is to replace just one drink a day. The one that usually makes you feel worst. Then, if it works, you add more.

6. How to start (if you have never tried kombucha)
Three practical tips from people who have been drinking it for 11 years:
- Start with fruity flavours. FLOWERS, FRUTOS ROJOS, or HIBISCUS are the easiest for the first taste. NATURAL and VERBENA are for when your palate is accustomed.
- Try it well chilled. At room temperature, the acidity is more noticeable. The fridge softens it and makes it much more refreshing.
- 100-150 ml per day for the first two weeks. Your microbiota needs to adapt to the live probiotics. After that, 250-500 ml/day is a reasonable daily dose. More on daily quantity.
If you do not know where to start, we have prepared a pack of 6 with the most accessible varieties (HIBISCUS, FLOWERS, GINGER, ORIGINAL, FRUTOS ROJOS, GREEN). View shop.

8. Common questions before starting
Is kombucha a soft drink?
No. A soft drink is a beverage with water, sugar, injected carbonation, phosphoric acid, and flavourings. Kombucha is natural fermented tea: the carbonation comes from the fermentation itself, no sugar is added (it is consumed in the process), and no acids are added. It contains live probiotics and tea polyphenols.
How much does Mūn kombucha cost?
Between €3.20 and €3.90/250 ml in the online shop. In supermarkets, it may vary by point of sale. It is more expensive than an industrial soft drink because fermentation takes weeks and the ingredients are organic, but comparable to a craft beer.
Does it contain a lot of sugar?
No. Premium variants contain between 0.09 and 1.80 g of sugar per 100 ml. A regular soft drink has 10.6 g. Calculate exactly how much you consume with the official calculator.
Can I drink it every day?
Yes. 250-500 ml/day is a reasonable daily dose for healthy adults. If you have never tried it, start with 100-150 ml/day for the first two weeks to allow your microbiota to adapt.
Is it suitable for children?
It is not recommended for children under 12 due to the residual alcohol (<1.2%) and the mild caffeine from the base tea. More on pregnancy and breastfeeding.
Is it the same as kefir?
No. Both are fermented and provide probiotics, but kefir starts with dairy (or water + kefir grains) and kombucha with tea. Kefir provides protein; kombucha, tea polyphenols.
Does it need refrigeration?
Unpasteurised kombucha (ours) does: cold stops fermentation and keeps the live probiotics alive. Pasteurized kombucha does not — but it no longer contains live probiotics. More on storage.
Can it be used for cocktails?
Yes, and very well. With or without alcohol. We have an entire blog with recipes: Mūn recipes. Some favourites: Alcohol-free Tinto de Verano (HIBISCUS), Alcohol-free Mojito (NOT-MOJITO), Spritz with kombucha (VERBENA).
