This green smoothie with kombucha is a Sweet Duo in two layers: a green one with spinach, celery, avocado, and Mūn GREEN Kombucha, and a sweet layer of mango, banana, and coconut milk. It's finished with a quick raspberry coulis.
What is this Sweet Duo green smoothie
It's a two-layer green smoothie served in the same glass. The green base provides the herbal flavor and freshness of GREEN Kombucha fermented with matcha green tea and basil. The sweeter top layer balances the whole with mango, banana, and coconut milk. The raspberry coulis finishes the recipe with an acidic touch.
This green smoothie is designed for breakfast or a snack, with no added sugar beyond the honey in the coulis. It is prepared in less than 15 minutes with a blender and a fine-mesh strainer.
Ingredients (2 servings)
Green Smoothie Layer
- 1 cup (240 ml) of very cold Mūn GREEN Kombucha
- 2 handfuls of fresh spinach
- 2 celery stalks
- 2 tablespoons of chia seeds
- 1 handful of fresh mint leaves
- 1 piece (2 cm) of peeled fresh ginger
- 1/2 ripe avocado
- 1/2 cucumber
- Juice of 1/2 lemon
Sweet Smoothie Layer
- 1 ripe mango, peeled and diced
- 1 ripe banana
- 200 ml of coconut milk
- 1 teaspoon of coconut oil
- 1/2 teaspoon of turmeric powder
- 1 pinch of salt
Quick Raspberry Coulis
- 1 handful of fresh raspberries
- 1 teaspoon of honey
For garnish
- Shredded coconut
- Fresh raspberries
- Fresh mint leaves
Step-by-step preparation
- In the blender jar, add the GREEN Kombucha, spinach, celery, chia seeds, mint, ginger, avocado, cucumber, and lemon juice.
- Blend until smooth and creamy. If it's too thick, add a little more kombucha.
- Divide the green mixture into two tall glasses, filling them halfway. Store the glasses in the fridge while you prepare the second layer.
- Clean the jar and add the mango, banana, coconut milk, coconut oil, turmeric, and pinch of salt.
- Blend until homogeneous.
- Carefully pour the sweet mixture over the green layer, resting the stream on the back of a spoon so the two layers don't mix.
- For the coulis, mash the raspberries in a small bowl and strain the puree to remove the seeds. Add the honey and mix.
- Distribute the coulis over the smoothies. Garnish with shredded coconut, fresh raspberries, and mint leaves. Serve immediately.

Why we use GREEN Kombucha in this green smoothie
Mūn GREEN Kombucha is fermented with matcha green tea and basil. It provides an herbal and mineral base that pairs well with the spinach, celery, and cucumber in the green layer. The acidity of the kombucha balances the sweetness of the mango and banana in the Sweet layer without needing to add more juice.
As a fermented tea, it contains live cultures. To maintain them, do not heat the kombucha and use it cold directly from the fridge.
Variations
- More protein: add one tablespoon of plant-based protein powder to the green layer.
- Creamier: replace the cucumber with half an extra avocado or 2 tablespoons of plant-based yogurt.
- Without honey: use agave or date syrup for the coulis.
- With red berries: replace the raspberries in the coulis with strawberries or blackberries.
- Tropical version: swap mango for pineapple and add lime zest.
- Dairy-free and coconut-free: use oat drink instead of coconut milk.
Common mistakes
- Mixed layers: if you pour the Sweet layer too quickly, it will mix with the green one. Rest the stream on the back of a spoon and pour slowly.
- Liquid texture: too much kombucha makes the green smoothie unable to support the weight of the top layer. Start with 1 cup and adjust.
- Coulis with seeds: if you don't strain it, it will be grainy. Pass the puree through a fine-mesh strainer.
- Lukewarm kombucha: using room-temperature kombucha dulls the smoothie's freshness. Always serve it cold.
- Underripe mango: if the mango is hard, the Sweet layer will be fibrous. Wait until it yields to the touch.
FAQ
Can I prepare the green smoothie the night before?
The green layer lasts in the fridge for about 4 hours without much oxidation if it contains lemon. The Sweet layer and coulis are best prepared just before serving.
Does any variety of Mūn Kombucha work?
The recipe is designed with GREEN, due to the matcha and basil. With Ginger, it's spicier; with Berries, the profile shifts towards red berries.
Can I skip the coulis?
Yes. The green smoothie also works without coulis, decorated only with fresh raspberries and shredded coconut.
Is it suitable for children?
Yes, but kombucha contains a minimal amount of alcohol from fermentation (less than 1%). For small children, replace kombucha with coconut water.
How many calories does one serving have?
Approximately 320 kcal per 400 ml glass, depending on the size of the mango and avocado.
When to drink it
It works well as a complete breakfast, as a snack after training, or as a light dessert after a plant-based meal. The Sweet layer provides fast carbohydrates from banana and mango, and the green layer adds fiber from celery, cucumber, and chia seeds.
