Not-Birra is not an alcohol-free beer. It's something prior and distinct. In 2017, we created the first "non-beer" on the market: a drink with the smell, taste, and color of beer, but made from fermented kombucha and hop infusion, without a single grain and with less than 1.2% alcohol. We don't compete with industrial 0.0s: we offer something else, fermented and alive.

What is Not-Birra?

Not-Birra (originally Paleobirra) is a fermented "non-beer": it starts from our kombucha base —fermented, living tea— to which we add a hop infusion, the same ingredient that gives beer its characteristic aroma and bitterness. The result has the fizz, color, and character of a beer, without the grains or the process of a conventional beer.

It's not an alcohol-free beer: the honest difference

Here's the key, and we prefer to explain it clearly. An alcohol-free beer (the 0.0s) is a normal beer from which, at the end of the process, the alcohol is removed. It still starts from malted grains.

Not-Birra takes the opposite path: it was never a beer. It's a kombucha fermented with hops. That's why it's an alternative to alcohol-free beer for those looking for something different: a probiotic, living, grain-free drink with very little sugar. It's not better or worse than a 0.0: it's another category.

How the first "non-beer" was born (2017)

In 2017, we had been making kombucha for two years. We liked what we did, but every now and then we missed a cold beer. So we set out to formulate a "beer-like" kombucha.

The idea was clear from the beginning; the name, much less so. We went through Kombutxabirra, Kombuchabirra, Kombutxabeer, Kombirra, Kombeer… In the end, it was the paleo diet —which restricts grains— that christened it: Paleobirra was born. Years later, we rebranded it Not-Birra: if it's not a beer, it's a "Not-beer".

It was the first "non-beer" on the market: grain-free, fermented, and with hardly any alcohol. A category that didn't exist then and that we opened.

2015

Mūn is born. We start fermenting artisan kombucha.

2017

We launch Paleobirra (today Not-Birra): the first "non-beer" on the market, kombucha with hops and no grains.

Today

Not-Birra and Not-Birra Lemon, available in bottle and can. The "non-beer" category continues to grow.
