The easiest non-alcoholic Aperol to prepare at home. Kombitter is our version of the bitter Italian aperitif: two parts Mūn Flowers Kombucha, a dash of orange peel, and plenty of ice. Five minutes, zero added sugar, all the bitter-floral character of the original.
What is Kombitter
Kombitter is a Mūn Kombucha creation that replicates the bitter-citrus profile of Aperol and Campari but without alcohol and without the 11 g of sugar per 100 ml of the original Italian drink. The base is Flowers, our floral kombucha with notes of hibiscus, rose, and elderflower, which provides the characteristic reddish-amber color of the aperitif and the fermented acidity the drink requires.
It works as a non-alcoholic bitter aperitif before meals or as an afternoon long drink. It is Mūn's response to the no/low boom: same balloon glass, same ritual, no hangover.
Ingredients (1 glass)
- 150 ml Mūn Flowers Kombucha (the key to color and acidity)
- 50 ml very cold sparkling water
- 1 teaspoon blood orange juice (optional, intensifies the red)
- 2 drops non-alcoholic Angostura or non-alcoholic orange bitter
- 1 thick orange slice
- Large ice cubes
Step-by-step preparation
- Chill the balloon glass for 5 minutes in the freezer. A cold glass preserves the kombucha's fizz.
- Fill the glass with 4-5 large ice cubes (small ones dilute quickly).
- Pour the Flowers Kombucha directly over the ice, without shaking the bottle.
- Add the blood orange juice and bitter drops.
- Top with sparkling water. Stir just once with a long spoon, from bottom to top.
- Finish with the thick orange slice wedged on the rim.

Why Flowers Kombucha is the perfect base
Mūn's Flowers is a kombucha fermented with green tea, hibiscus, rose, and elderflower. From this come the three elements a convincing non-alcoholic Aperol needs:
- Amber-reddish color: hibiscus provides the natural red tone without E-124 colorants.
- Floral bitterness: fermented flowers leave a soft, non-aggressive bitter finish.
- Fermented acidity: the SCOBY produces organic acids that replace Aperol's astringent effect.
We have been fermenting Flowers in our Vallès workshop since 2015. Unpasteurized, no added sugar to the final product.
Kombitter Variations
- Kombitter Negroni: add 30 ml of non-alcoholic white vermouth and a flamed orange peel.
- Kombitter Spritz: double the sparkling water (100 ml) and serve in a white wine glass with plenty of ice.
- Kombitter with real Campari (for those who prefer it with alcohol): add 20 ml of Campari and reduce Flowers to 130 ml.
- Fruity Kombitter: replace orange with pink grapefruit and add a basil leaf.
- Spicy Kombitter: a thin slice of fresh ginger and half a dried chili for 2 minutes before serving.
- Double Bitter Kombitter: 4 drops of non-alcoholic Angostura instead of 2, and a grapefruit twist instead of orange.
Common mistakes
- Small or crushed ice: dilutes the kombucha in 2 minutes. Use large cubes or spheres.
- Shaking the Flowers bottle: loses fizz. Serve directly, without inverting.
- Warm glass: the aperitif needs 4-6 °C. If you don't chill the glass, the first sip loses nuances.
- Too much non-alcoholic bitter: Angostura bitters very quickly. 2-3 drops maximum per glass.
- Thin orange slice as decoration: a thick slice (1 cm) releases more essential oils at the rim of the glass.
When to serve it
Kombitter works during the aperitif slot: between 6:30 PM and 9:00 PM, before dinner. It pairs with olives, salted anchovies, rosemary focaccia, taralli, Serrano ham, and cured cheese. The kombucha's acidity cleanses the palate and stimulates appetite.
It is also a good option for long weekend after-dinner gatherings where you want to extend the aperitif without accumulating alcohol.
Frequently Asked Questions
Does Kombitter contain alcohol?
No. Mūn's Flowers Kombucha has less than 0.5% ABV, the legal limit to be considered non-alcoholic in Spain.
Can I prepare it in a pitcher for several people?
Yes. For 6 glasses: 900 ml Flowers + 300 ml sparkling water + 6 teaspoons blood orange juice + 12 drops non-alcoholic bitter. Add the sparkling water just before serving.
Can I use another Mūn kombucha?
It works with Ginger (spicier) and with Blueberry (darker). But Flowers provides the exact color and floral bitterness of Aperol.
How many calories does a Kombitter have?
About 25 kcal per 250 ml glass. A traditional Aperol Spritz is around 150 kcal.
Is it suitable for pregnant women?
Mūn's non-alcoholic kombucha is below 0.5%. For pregnancy, breastfeeding, or medication, consult your doctor first.
Can it be prepared the night before?
No. The fizz is lost, and the orange slice becomes bitter. Assemble it just before serving.
