- 1 cup cooked quinoa or brown rice
- 1 cup fresh spinach
- 1/2 cup roasted cauliflower
- 1/2 cup cooked chickpeas
- 1/2 avocado, sliced
- 1/4 cup sliced cherry tomatoes
- 1/4 cup sliced cucumber
- 1/4 cup grated carrots
- 1 tablespoon hemp seeds
- 1 tablespoon tahini
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup or honey
- 1 cup of HIBISCUS Kombucha
- 1/2 teaspoon ground cinnamon
- 1 ripe banana
- 1 cup of seasonal fruits (strawberries, blueberries, kiwi, mango, etc.)
- 1/2 cup of nuts (walnuts, almonds, hazelnuts, pistachios, etc.)
- 1/4 cup sunflower and pumpkin seeds
- Salt and pepper to taste

Elaboration
- Cook quinoa or brown rice according to package directions.
- Roast the cauliflower in a 200ºC oven for about 15-20 minutes, or until golden and tender.
- Wash the spinach and place it in the base of the mandala bowl.
- Add the quinoa or brown rice on top of the spinach.
- In a circle, add the cooked chickpeas, roasted cauliflower, sliced avocado, cherry tomatoes, cucumber and grated carrots.
Sprinkle the hemp seeds over the vegetable mixture. - Make the tahini vinaigrette by whisking together the tahini, lemon juice, maple syrup or honey, salt, and pepper in a small bowl.
Mix well until a smooth sauce forms. - Drizzle the tahini vinaigrette over the mandala bowl.
In a separate bowl, mix the HIBISCUS Kombucha with cinnamon powder and ripe banana. - Add the kombucha and fruit mixture to the mandala bowl.
- Decorate with seasonal fruits, nuts and sunflower and pumpkin seeds.
