INGREDIENTS:
200 g noodles
150 ml of Mun Kombucha Premium of the Natural variety
650 ml vegetable broth
350 g mushrooms (mushrooms, shiitake, giant portobello)
1/2 cabbage pad choi
1 onion
2 cloves of garlic
2 cubes of homemade salmorreta (this is a traditional sauce from Valencian cuisine, especially used in paella and other rice dishes. It is typically composed of ingredients such as garlic, tomato and red pepper).
1 branch of citronella
Extra virgin olive oil
Salt and pepper to taste
Chopped chives to decorate
ELABORATION:
Heat a paella and add a little olive oil. Lightly brown the noodles for a few minutes. Reserve them.
In the same paella, sauté the garlic and onion with the salmorreta until they are well poached.
Add the chopped mushrooms and kombucha. Cook over high heat for a few minutes.
Add the chopped pad choi and lemongrass. See adding vegetable broth as necessary.
Finally, add the noodles and cook until they absorb all the liquid.
Turn off the heat and let it sit so the noodles can finish cooking.
Serve with a little chopped chives on top and enjoy, as they say!
